1 cup chopped spinach (optional for color & nutrients)
½ cup chopped green onions or chives
1 tbsp butter or olive oil
Instructions:
Cook the Chicken: In a large pot, add chicken breasts and chicken broth. Bring to a boil, then reduce to a simmer for about 15–20 minutes or until chicken is cooked through.
Shred the Chicken: Remove chicken, shred it with two forks, and set aside.
Sauté Additions (optional but adds depth): In the same pot, melt butter or use a splash of oil. Sauté green onions for 2–3 minutes.
Add Dairy & Seasoning: Lower the heat and stir in cream cheese until melted and smooth. Add heavy cream, garlic powder, onion powder, dill, paprika, salt, and pepper.
Combine Everything: Add the shredded chicken back into the pot. Stir in shredded cheddar cheese and crumbled bacon. Let it simmer gently for another 5–10 minutes.
Toss in Spinach (if using): Add spinach and let it wilt – about 2–3 minutes.
