Creamy Crack Chicken Soup

Ingredients:

  • 1 lb (450g) chicken breast (boneless, skinless)
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 6 oz cream cheese (cubed)
  • 4 slices cooked bacon (crumbled)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp dried dill
  • ½ tsp paprika
  • Salt and pepper to taste
  • 1 cup chopped spinach (optional for color & nutrients)
  • ½ cup chopped green onions or chives
  • 1 tbsp butter or olive oil

Instructions:

  1. Cook the Chicken:
    In a large pot, add chicken breasts and chicken broth. Bring to a boil, then reduce to a simmer for about 15–20 minutes or until chicken is cooked through.
  2. Shred the Chicken:
    Remove chicken, shred it with two forks, and set aside.
  3. Sauté Additions (optional but adds depth):
    In the same pot, melt butter or use a splash of oil. Sauté green onions for 2–3 minutes.
  4. Add Dairy & Seasoning:
    Lower the heat and stir in cream cheese until melted and smooth. Add heavy cream, garlic powder, onion powder, dill, paprika, salt, and pepper.
  5. Combine Everything:
    Add the shredded chicken back into the pot. Stir in shredded cheddar cheese and crumbled bacon. Let it simmer gently for another 5–10 minutes.
  6. Toss in Spinach (if using):
    Add spinach and let it wilt – about 2–3 minutes.
  7. Serve Hot:
    Top with extra cheese, bacon, or green onions if you like. Enjoy with a spoon and a smile 😋
