Homemade Vegan Sausages

๐Ÿงพ Ingredients:

Dry:

  • 1 cup vital wheat gluten
  • 2 tbsp nutritional yeast
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp ground black pepper
  • 1/2 tsp salt
  • Optional: pinch of chili flakes for heat

Wet:

  • 3/4 cup cooked and mashed chickpeas (or white beans)
  • 2 tbsp soy sauce or tamari
  • 1 tbsp tomato paste
  • 1 tbsp olive oil (or any oil)
  • 3/4 cup vegetable broth
  • 1 tsp liquid smoke (optional but great for flavor)

  1. Mix dry ingredients in a bowl.
  2. In a separate bowl, mash chickpeas, then mix with all other wet ingredients until well combined.
  3. Combine wet and dry ingredients. Mix and knead for 2โ€“3 minutes until a dough forms. It should be elastic but not too dry.
  4. Divide the dough into 4 equal parts. Roll each into a sausage shape.
  5. Wrap each sausage tightly in parchment paper, then in foil (or use just parchment if avoiding foil). Twist ends like a candy wrapper.
  6. Steam sausages for 35โ€“40 minutes (use a steamer basket or place in a steaming rack over boiling water with lid on).
  7. Let them cool slightly, then refrigerate for firmer texture (best if left a few hours or overnight).
  8. Pan-fry or grill before serving for crispy edges and extra flavor!

๐ŸŒŸ Tips:

  • Add finely chopped mushrooms or sundried tomatoes for variation.
  • For a gluten-free version, use chickpea flour and oats instead of vital wheat gluten, but note the texture will be softer and more like patties.
