Keto Crunch Wrap

Ingredients:
- 2 large low-carb tortillas (like coconut flour or almond flour tortillas)
- 1 cup cooked chicken breast (shredded) or ground beef
- 1/4 cup shredded cheese (cheddar or Mexican blend)
- 1/4 cup sour cream
- 1/4 cup guacamole
- 1/4 cup fresh lettuce (shredded)
- 1/4 cup diced tomatoes (optional)
- 1/4 cup sliced black olives (optional)
- 1/2 teaspoon taco seasoning (optional)
- 1 tablespoon olive oil or butter (for frying)
Instructions:
- Prepare the Filling:
- In a bowl, mix the shredded chicken or ground beef with taco seasoning (if using). You can also add a little bit of salt and pepper to taste.
- If you haven’t already, chop up the lettuce, dice tomatoes, and slice olives.
- Assemble the Wrap:
- Lay one low-carb tortilla flat on a clean surface.
- Spread a layer of sour cream and guacamole in the center.
- Add the seasoned chicken or beef mixture on top.
- Sprinkle shredded cheese over the filling.
- Add the fresh lettuce, tomatoes, and olives on top for crunch.
- Fold the Wrap:
- Carefully fold in the sides of the tortilla towards the center, then fold the top and bottom edges, creating a wrap shape.
- Cook the Wrap:
- Heat the olive oil or butter in a non-stick skillet over medium heat.
- Place the wrap in the skillet, seam side down, and cook for 3-4 minutes on each side, until golden brown and crispy.
- Serve:
- Once crispy, remove from the skillet and cut in half. Serve with extra guacamole or sour cream on the side.
