Quick Vegan Ramen


Ingredients:
1 pack ramen noodles
4 cups vegetable broth
1 tbsp soy sauce
1 tsp miso paste
½ block tofu, cubed
1 cup mushrooms, sliced
1 small bok choy, halved
½ cup broccoli, roasted
¼ cup shredded carrots
Instructions:
Sauté tofu, mushrooms, and bok choy.
Simmer broth with soy sauce and miso.
Cook ramen, then combine with broth.
Add toppings and serve hot. Enjoy! 🍜
