REFFRESHING ORANGE CAKE

📝 INGREDIENTS:

For the base:

200 grams of Digestive biscuits

100 grams of melted butter

For the filling:

400 grams of cream cheese

200 grams of sugar

200 ml of whipping cream

2 eggs

The juice and the zest of 2 oranges

1 teaspoon of vanilla extract

1 teaspoon of gelatin powder

🔔 INSTRUCTIONS:

STEP 1: PREPARE THE BASE

– Crush Digestive cookies in a food processor until they are thin. Mix crushed cookies with melted butter until you get a homogeneous mixture.

– Press the cookie mix into the bottom of a removable mold to form the base of the cake. Refresh while preparing the stuffing.

STEP 2: MAKE THE STUFFING

– In a large bowl, beat the cream cheese with the sugar until smooth and creamy.

– Add the whipped cream and mix well. Insert eggs one by one, beating well after each addition.

– Add the juice and zest of the oranges, vanilla extract and gelatin powder. Mix until all the ingredients are well combined.

STEP 3: BAKE AND CHILL

– Pour the filling mixture over the cookie base in the mold. Bake in a preheated oven at 160°C for approximately 45 minutes, or until the center is firm.

– Let cool to room temperature and then refrigerate for at least 4 hours before serving.
