Air fryer roasted moroccan baby carrots

Ingredients:

  • 1 lb (450g) baby carrots
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp smoked paprika
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp cayenne pepper (optional, for heat)
  • Salt and black pepper to taste
  • 1 tbsp honey or maple syrup
  • 2 tbsp chopped fresh parsley (for garnish)
  • 1 tbsp lemon juice

Instructions:

  1. Prepare the Carrots: Wash and dry the baby carrots. If they’re thicker, slice them in half lengthwise for even cooking.
  2. Mix the Spices: In a small bowl, combine cumin, coriander, smoked paprika, cinnamon, ground ginger, cayenne pepper, salt, and black pepper.
  3. Coat the Carrots: Toss the carrots in olive oil, then sprinkle the spice mixture over them. Add honey or maple syrup and toss to ensure they’re evenly coated.
  4. Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for 3-5 minutes.
  5. Cook the Carrots: Place the seasoned carrots in a single layer in the air fryer basket. Cook for 12-15 minutes, shaking the basket halfway through, until the carrots are tender and slightly caramelized.
  6. Finish and Serve: Remove the carrots from the air fryer and toss with lemon juice. Garnish with chopped parsley and serve warm.
