VEGAN LOCAL RESTAURANT POSTED TACOS
Ingredients:
8-10 corn tortillas
1 can of black beans, drained and rinsed
1 avocado, diced
1/2 red onion, diced
1/2 red bell pepper, diced
1/2 cup of chopped fresh cilantro
1 lime, juiced
Salt and pepper to taste
Optional: vegan cheese, hot sauce, vegan sour cream
Instructions:
Preheat your oven to 350°F.
Wrap the corn tortillas in foil and heat in the oven for 10-15 minutes until warm and pliable.
In a medium-sized bowl, mix the black beans, avocado, red onion, red bell pepper, cilantro, lime juice, salt and pepper together.
Fill each tortilla with 2-3 tablespoons of the bean and avocado mixture.
If desired, top each taco with vegan cheese, hot sauce, and/or vegan sour cream.
Serve immediately and enjoy!
