keto grilled cheese chaffle

Ingredients:

  • 2 large eggs
  • 1 cup shredded mozzarella cheese (or any cheese of your choice)
  • 2 tbsp almond flour
  • 1/4 tsp baking powder
  • 1/4 tsp garlic powder (optional)
  • Butter for greasing the waffle maker and spreading on the chaffles
  • 2 slices of cheese (cheddar, mozzarella, or your favorite keto-friendly cheese)

Instructions:

  1. Make the Chaffle Batter:
    • In a bowl, beat the eggs.
    • Add the shredded mozzarella cheese, almond flour, baking powder, and optional garlic powder.
    • Mix well until the batter forms a thick consistency.
  2. Preheat the Waffle Maker:
    • Preheat your waffle maker and lightly grease it with butter or non-stick spray.
  3. Cook the Chaffles:
    • Spoon about 2–3 tbsp of the batter into the waffle maker, spreading it out evenly.
    • Close the waffle maker and cook for 3–5 minutes or until golden and crispy.
    • Repeat for a second chaffle.
  4. Assemble the Grilled Cheese:
    • Once both chaffles are cooked, butter the outside of each one.
    • Place a slice of cheese between the chaffles.
    • Heat a skillet over medium heat and grill the sandwich for 2-3 minutes per side, pressing down gently with a spatula until the cheese is melted and the chaffles are golden brown.
  5. Serve:
