keto grilled cheese chaffle

Ingredients:
- 2 large eggs
- 1 cup shredded mozzarella cheese (or any cheese of your choice)
- 2 tbsp almond flour
- 1/4 tsp baking powder
- 1/4 tsp garlic powder (optional)
- Butter for greasing the waffle maker and spreading on the chaffles
- 2 slices of cheese (cheddar, mozzarella, or your favorite keto-friendly cheese)
Instructions:
- Make the Chaffle Batter:
- In a bowl, beat the eggs.
- Add the shredded mozzarella cheese, almond flour, baking powder, and optional garlic powder.
- Mix well until the batter forms a thick consistency.
- Preheat the Waffle Maker:
- Preheat your waffle maker and lightly grease it with butter or non-stick spray.
- Cook the Chaffles:
- Spoon about 2–3 tbsp of the batter into the waffle maker, spreading it out evenly.
- Close the waffle maker and cook for 3–5 minutes or until golden and crispy.
- Repeat for a second chaffle.
- Assemble the Grilled Cheese:
- Once both chaffles are cooked, butter the outside of each one.
- Place a slice of cheese between the chaffles.
- Heat a skillet over medium heat and grill the sandwich for 2-3 minutes per side, pressing down gently with a spatula until the cheese is melted and the chaffles are golden brown.
- Serve:
