WEIGHT WATCHERS CABBAGE SOUP

Ingredients

  • 1/2 head of cabbage, chopped
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 2 carrots, sliced
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 3 cups chopped zucchini
  • 2 cups sliced mushrooms
  • 1 can (14.5 oz) diced tomatoes (no salt added if desired)
  • 6 cups vegetable broth (or chicken broth if preferred)
  • 1-2 teaspoons Italian seasoning (or to taste)
  • 1/2 teaspoon crushed red pepper flakes (optional for a little spice)
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional garnish)

Instructions

  1. In a large pot, sauté the onion and garlic over medium heat for 2-3 minutes until fragrant. You can use a small amount of oil or a splash of broth to prevent sticking.
  2. Add the carrots, green bell pepper, red bell pepper, zucchini, and mushrooms. Cook for an additional 5 minutes, stirring occasionally.
  3. Add the chopped cabbage, diced tomatoes, and vegetable broth. Stir to combine.
  4. Season with Italian seasoning, crushed red pepper flakes (if using), and salt and pepper.
  5. Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 20-30 minutes, or until the vegetables are tender.
  6. Taste and adjust seasoning as needed. Garnish with fresh parsley if desired.

This recipe makes about 6-8 servings.
