Keto Layered Mexican Casserole

Ingredients

  • 1 lb ground beef (preferably grass-fed, 80/20 lean-to-fat ratio)
  • 1 medium onion, diced
  • 1 bell pepper, diced (any color, but green has the least carbs)
  • 1 tbsp olive oil or avocado oil
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or homemade taco seasoning mix for keto-friendly ingredients)
  • 1 can diced tomatoes with green chilies (about 10 oz, drained)
  • 1 cup cauliflower rice, cooked (fresh or frozen)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • 1/4 cup sliced black olives
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro (optional for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Beef Mixture:
    • Heat olive oil in a large skillet over medium heat. Add diced onions and bell pepper; cook until they’re soft, about 5 minutes.
    • Add minced garlic and cook for 1 more minute, stirring constantly.
    • Add the ground beef and cook until it’s browned, breaking it up with a spatula. Drain any excess fat.
    • Stir in the taco seasoning and canned tomatoes with green chilies. Let it simmer for 3-5 minutes to meld flavors. Remove from heat.
  3. Assemble the Casserole:
    • Grease a 9×9-inch baking dish. Spread a layer of cauliflower rice on the bottom of the dish.
    • Add a layer of the beef mixture, then top with a layer of cheddar cheese.
    • Repeat layering with the beef mixture, followed by shredded Monterey Jack cheese.
  4. Bake the Casserole:
    • Cover the baking dish with foil and bake for 15-20 minutes, until the cheese is melted and bubbly.
    • Remove foil for the last 5 minutes for a bubbly, golden top layer.
  5. Add Toppings and Serve:
    • Remove the casserole from the oven. Spread sour cream over the top.
    • Sprinkle with black olives, green onions, and cilantro if desired.
  6. Serve: Let the casserole rest for 5-10 minutes before slicing and serving. Enjoy!

Notes

  • Make it spicier by adding sliced jalapeños or using a spicy taco seasoning.
