Vegan Loaded Nachos
Ingredients
2 cups of red potatoes
2 carrots
1 sweet onion
1 Roma tomato
1 cup of cashews
1 TS of seamoss
1 can of lite coconut milk
1-2 cups of nutritional yeast “as needed”
Directions
Bring potatoes, carrots, onion and cashews to boil. Drain and add to blender with your tomato and yeast. Blend thoroughly. Pour into pot on medium to low heat stirring . Add this mixture of seasonings. Garlic and onion powder, Pink salt, pepper, lemon pepper, paprika, thyme, oregano, and cumin. Season to taste . This mixture is of seasoning has stopped me from getting headaches and is all natural. Add a can of drained rotel at the end.
