1 ½ cups plain Greek yogurt (preferably whole milk or 2%)
4 oz cream cheese, softened
¼ cup honey or maple syrup
1 tsp vanilla extract
1 tbsp lemon juice (optional, for tanginess)
For the parfait layers:
½ cup graham cracker crumbs (or digestive biscuits, crushed)
2 tbsp butter, melted
1 tbsp sugar (optional)
1 ½ cups mixed berries (strawberries, blueberries, raspberries) or any fruit of your choice
Instructions:
1. Make the Cheesecake Yogurt Mixture:
In a medium bowl, beat together the cream cheese and honey (or maple syrup) until smooth.
Add the Greek yogurt, vanilla extract, and lemon juice, and continue to beat until smooth and well combined. Set aside.
2. Prepare the Graham Cracker Crust:
In a separate bowl, mix the graham cracker crumbs with melted butter and sugar (if using) until it resembles wet sand.
3. Assemble the Parfaits:
Take small glasses or parfait cups and layer them as follows:
Add a layer of graham cracker mixture at the bottom.
Spoon a layer of the cheesecake yogurt mixture on top of the crumbs.
Add a layer of berries or fruit on top of the yogurt mixture.
Repeat the layers until you reach the top of your glass.
4. Serve:
Chill the parfaits in the fridge for about 30 minutes if you want them extra cool, or serve immediately. Optionally, garnish with extra berries, a drizzle of honey, or some fresh mint leaves.
Tips:
You can swap the berries for any other fruit you like such as peaches, mangoes, or bananas.
For a richer flavor, use full-fat Greek yogurt and cream cheese.
If you prefer a lower-sugar version, you can reduce or skip the sugar in the graham cracker crust.
