1 can (20 oz) crushed pineapple, drained (reserve 2 tablespoons of the juice)
1/2 cup sugar
2 tablespoons flour
1 cup shredded cheddar cheese (optional but adds great flavor)
1/2 cup unsalted butter, melted
1 cup Ritz crackers, crushed (or bread crumbs)
4 large eggs, lightly beaten
Instructions:
Preheat the oven to 350°F (175°C). Grease a medium-sized baking dish (about 8×8 inches or a 1.5-quart dish).
Prepare the pineapple mixture:
In a large mixing bowl, combine the drained crushed pineapple, sugar, flour, shredded cheddar cheese (if using), and the reserved 2 tablespoons of pineapple juice.
Stir in the beaten eggs until well mixed.
Assemble the bake:
Pour the pineapple mixture into the prepared baking dish.
Mix the melted butter and crushed Ritz crackers (or bread crumbs) in a separate bowl until they form a crumbly topping.
Evenly spread this crumb mixture over the top of the pineapple mixture.
Bake:
Bake in the preheated oven for 35-40 minutes or until the topping is golden brown and the pineapple mixture is bubbly.
Serve:
Let the pineapple bake cool for a few minutes before serving. It pairs wonderfully with ham or as part of a holiday brunch spread.
