– 1 tablespoon lemon juice
– 1/4 cup brown sugar
– 1/2 teaspoon cinnamon
– 1/4 cup chopped nuts (optional)

For the Cheesecake Filling:
– 8 oz cream cheese, softened
– 1/4 cup granulated sugar
– 1 teaspoon vanilla extract
– 1 egg
– 1/4 cup sour cream

For Topping:
– 1/4 cup crushed graham crackers
– 2 tablespoons melted butter

Simple Directions: 

1. Prepare the Apples: Preheat your oven to 350°F (175°C). Core the apples and drizzle the inside with lemon juice to prevent browning.
2. Mix Sugar and Spice: In a small bowl, combine brown sugar, cinnamon, and chopped nuts if using. Sprinkle this mixture inside each apple.
3. Make the Cheesecake Filling: In a mixing bowl, beat together the softened cream cheese, granulated sugar, vanilla extract, and egg until smooth. Then add the sour cream and mix until well combined.
4. Stuff the Apples: Carefully fill each apple with the cheesecake mixture until they are full.
5. Prepare the Topping: In a separate bowl, mix crushed graham crackers with melted butter. Sprinkle this mixture over the stuffed apples.
6. Bake: Place the apples in a baking dish and bake for about 30 minutes, or until the apples are tender and the filling is set.
