Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup erythritol (or your preferred keto-friendly sweetener)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups almond flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream Butter and Sweetener: In a large mixing bowl, beat the softened butter and erythritol together until light and fluffy.
  3. Add Egg and Vanilla: Mix in the egg and vanilla extract until well combined.
  4. Combine Dry Ingredients: In another bowl, whisk together the almond flour, baking powder, and salt.
  5. Mix Together: Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  6. Shape the Cookies: Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart. Flatten each ball slightly with your fingers or the bottom of a glass.
  7. Bake: Bake for 12-15 minutes, or until the edges are golden.
  8. Cool: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
