Reuben Bake Recipe

Ingredients:
- 1 loaf of rye bread (about 16 slices), cut into 1-inch cubes
- 2 cups shredded Swiss cheese
- 1 pound deli corned beef, chopped
- 1 cup sauerkraut, drained
- 1 cup thousand island or Russian dressing
- 4 large eggs
- 2 cups milk
- 1/2 teaspoon caraway seeds (optional)
- Salt and pepper to taste
Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C).
- Prepare Bread and Meat: Place the rye bread cubes in a greased 9×13-inch baking dish. Sprinkle half of the shredded Swiss cheese over the bread cubes. Top with chopped corned beef and sauerkraut.
- Mix Dressing: In a medium bowl, combine the thousand island or Russian dressing with the remaining Swiss cheese. Pour this mixture evenly over the bread, meat, and sauerkraut.
- Prepare Egg Mixture: In a separate bowl, whisk together the eggs, milk, caraway seeds (if using), salt, and pepper. Pour this mixture over the layers in the baking dish, making sure everything is well soaked.
- Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and the egg mixture is set.
- Serve: Let it cool for a few minutes before serving. Enjoy your Reuben bake!
