Weight Watchers Taco Casserole
Ingredients:
- 1 lb lean ground turkey or ground beef (90% lean)
- 1 small onion, chopped
- 1 packet taco seasoning (low-sodium if possible)
- 1 can (10 oz) Rotel tomatoes with green chilies (undrained)
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn kernels, drained
- 1 cup salsa (choose your favorite)
- 1 cup fat-free Greek yogurt
- 1 cup reduced-fat shredded cheddar cheese
- 1 cup crushed tortilla chips (or use baked tortilla chips for a lighter option)
- Optional toppings: sliced green onions, chopped cilantro, diced tomatoes, shredded lettuce, avocado slices
Instructions:
- Preheat the oven to 350°F (175°C). Spray a 9×13-inch casserole dish with non-stick cooking spray.
- Cook the ground turkey (or beef) and chopped onion in a large skillet over medium heat until the meat is browned and the onion is softened. Drain any excess fat.
- Stir in the taco seasoning and cook for another 2-3 minutes, making sure the meat is well coated.
- Add the Rotel tomatoes, black beans, corn, and salsa to the skillet. Stir to combine and cook for 5 minutes, allowing the flavors to meld together.
- Remove the skillet from heat and stir in the Greek yogurt. Mix well.
- Layer half of the crushed tortilla chips on the bottom of the prepared casserole dish.
- Spread the turkey mixture evenly over the chips.
- Top with the remaining crushed tortilla chips and then sprinkle the shredded cheese evenly over the top.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Garnish with optional toppings like green onions, cilantro, tomatoes, shredded lettuce, or avocado slices before serving.
Serving Suggestions:
This casserole pairs well with a simple side salad or steamed vegetables. You can also serve it with additional salsa, Greek yogurt, or guacamole on the side.
