Mediterranean chicken salad – 2 points on Weight Watchers

Ingredients:
- 1 cup cooked, shredded chicken breast (about 140g)
- 1 cup chopped cucumbers
- 1 cup cherry tomatoes, halved
- 1/4 cup sliced Kalamata olives
- 1/4 cup diced red onion
- 1/4 cup crumbled feta cheese (use reduced-fat if desired)
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
Instructions:
- In a large bowl, combine the shredded chicken, cucumbers, cherry tomatoes, olives, red onion, and feta cheese.
- In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper.
- Pour the dressing over the salad and toss to coat evenly.
- Serve chilled or at room temperature.
