Weight Watchers Meatloaf
Ingredients
- 1 Yellow Onion, finely chopped
- 1 Red Bell Pepper, finely chopped
- 3 Garlic Cloves, minced
- 2 lbs Lean Ground Beef
- 1 Cup Ketchup, divided
- ½ Cup Seasoned Bread Crumbs
- 1 Egg White
- 2 Tbsp Dijon Mustard
- 1 Tsp Worcestershire Sauce
- ¼ Tsp Salt
- ¼ Tsp Ground Black Pepper
Instructions
- Preheat the oven to 400ºF.
- Line a large rimmed baking sheet with aluminum foil. Set aside.
- Spray a large skillet with cooking spray. Cook the onion and bell pepper over medium-high heat. Stir occasionally until the veggies have softened, about five minutes.
- Add the minced garlic and cook, stirring constantly for about 30 seconds. Remove the skillet from the heat and let cool for about 10 minutes.
- In a large mixing bowl, combine the beef, onion mixture, 1/2 cup of ketchup, the seasoned bread crumbs, egg white, dijon mustard, Worcestershire sauce, salt, and ground pepper.
- Transfer the mixture to the baking sheet and form into a 5 x 10 inch loaf. Spread the remaining half cup of ketchup over the top of the meatloaf.
- Bake for 45 to 50 minutes or until the internal temperature reaches 160°F.
- Transfer the meatloaf to a cutting board and let rest for about 10 minutes then cut into eight equal slices.
