cottage cheese flatbread pizza
Ingredients:
For the Flatbread:
- 1 cup cottage cheese
- 2 large eggs
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup almond flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper to taste
For the Toppings:
- 1/2 cup sugar-free pizza sauce
- 1 cup shredded mozzarella cheese
- Various toppings (pepperoni, mushrooms, bell peppers, olives, etc.)
- Fresh basil (optional)
Instructions:
- Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Prepare the Flatbread: In a large mixing bowl, combine the cottage cheese, eggs, shredded mozzarella, Parmesan cheese, almond flour, baking powder, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Shape the Flatbread: Spread the mixture onto the prepared baking sheet, forming a rectangular or circular shape about 1/4 inch thick.
- Bake the Flatbread: Bake in the preheated oven for 15-20 minutes or until the flatbread is firm and golden brown.
- Add Toppings: Remove the flatbread from the oven and spread the sugar-free pizza sauce evenly over the top. Sprinkle the shredded mozzarella cheese over the sauce and add your desired toppings.
- Bake the Pizza: Return the flatbread to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Serve: Remove the pizza from the oven, let it cool for a few minutes, and garnish with fresh basil if desired. Slice and enjoy!
