Keto Churro Doughnut Holes

Ingredients:
For the Doughnut Holes:
- 1 1/2 cups almond flour
- 1/4 cup coconut flour
- 1/4 cup granulated erythritol or other keto-friendly sweetener
- 1/2 tsp baking powder
- 1/4 tsp salt
- 2 large eggs
- 1/4 cup unsweetened almond milk (or any keto-friendly milk)
- 2 tbsp melted butter or coconut oil
- 1 tsp vanilla extract
For the Churro Coating:
- 1/4 cup granulated erythritol or other keto-friendly sweetener
- 1 tbsp ground cinnamon

Instructions:
- Preheat Oven:
- Preheat your oven to 350°F (175°C). Grease a mini doughnut pan or a silicone mold with non-stick spray or a bit of oil.
- Prepare the Doughnut Mixture:
- In a medium bowl, whisk together the almond flour, coconut flour, erythritol, baking powder, and salt.
- In another bowl, beat the eggs, then mix in the almond milk, melted butter, and vanilla extract.
- Combine the wet and dry ingredients until well mixed and smooth.
- Fill the Pan:
- Spoon the batter into the mini doughnut pan, filling each cavity about 2/3 full.
- Bake:
- Bake for 10-12 minutes or until the doughnut holes are golden brown and a toothpick inserted into the center comes out clean.
- Allow them to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
- Coat in Cinnamon-Sugar:
- In a small bowl, mix the erythritol and cinnamon together.
- Once the doughnut holes are completely cool, roll them in the cinnamon-sweetener mixture until well coated.
