Keto Churro Doughnut Holes

Ingredients:

For the Doughnut Holes:

  • 1 1/2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup granulated erythritol or other keto-friendly sweetener
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 large eggs
  • 1/4 cup unsweetened almond milk (or any keto-friendly milk)
  • 2 tbsp melted butter or coconut oil
  • 1 tsp vanilla extract

For the Churro Coating:

  • 1/4 cup granulated erythritol or other keto-friendly sweetener
  • 1 tbsp ground cinnamon

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C). Grease a mini doughnut pan or a silicone mold with non-stick spray or a bit of oil.
  2. Prepare the Doughnut Mixture:
    • In a medium bowl, whisk together the almond flour, coconut flour, erythritol, baking powder, and salt.
    • In another bowl, beat the eggs, then mix in the almond milk, melted butter, and vanilla extract.
    • Combine the wet and dry ingredients until well mixed and smooth.
  3. Fill the Pan:
    • Spoon the batter into the mini doughnut pan, filling each cavity about 2/3 full.
  4. Bake:
    • Bake for 10-12 minutes or until the doughnut holes are golden brown and a toothpick inserted into the center comes out clean.
    • Allow them to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
  5. Coat in Cinnamon-Sugar:
    • In a small bowl, mix the erythritol and cinnamon together.
    • Once the doughnut holes are completely cool, roll them in the cinnamon-sweetener mixture until well coated.
