CUTLET


Ingredients:

  • 100 gms Quinoa –(soaked and boiled)⁣
  • 2 medium potatoes peeled, Boiled & mashed
  • 1 medium Carrot –shredded
  • 1/2 cup red bell pepper– finely chopped⁣
  • 1/2 cup Sweet corn – frozen
  • 1/2 cup green peas⁣
  • 1/2 black beans- canned
  • 2 tbsp⁣ Coriander leaves –
  • 1/2 tsp⁣ Black – pepper
  • 1 tea spoon salt
  • 2 tea spoon⁣ Roasted cumin powder
  • 1-2 tea spoon Oregano –
  • 1 tea spoon Chili flakes –
  • 1 cup Bread crumbs (Optional)
  • 2-3 tbsp⁣ Oil to fry– grape seed oil or any vegetable oil
    Steps:
  • Combine boiled potatoes, carrot, red bell pepper, green peas, black beans, and sweet corn into a bowl.⁣
  • Add boiled quinoa into the vegetable mix.⁣
  • Add all the spices and combine well to form a dough
  • Now, add chopped coriander leaves and mix.⁣
  • Take a small portion of the dough, shape it into a ball and press it gently to make a patty⁣.
  • If you like to make the cutlets more crispy, place bread crumbs in a shallow dish and coat gently both sides of the cutlets.
  • Heat and grease a pan with a little oil & place the prepared cutlets into the pan.
  • Flip the cutlets and cook until both the sides turn golden.⁣
  • Cutlets are ready to serve. Enjoy!
