Keto Alfredo Chicken Bake

Ingredients

For the Chicken Bake:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese

For the Alfredo Sauce:

  • 1 cup heavy cream
  • 4 oz cream cheese, softened
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Chicken: Season the chicken breasts with salt and pepper. Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook until golden brown on both sides, about 5 minutes per side. They do not need to be fully cooked as they will finish cooking in the oven.
  3. Make the Alfredo Sauce: In a medium saucepan, combine the heavy cream, cream cheese, Parmesan cheese, minced garlic, and Italian seasoning. Cook over medium heat, stirring frequently, until the sauce is smooth and creamy. Season with salt and pepper to taste.
  4. Assemble the Bake: Place the seared chicken breasts in a baking dish. Pour the Alfredo sauce over the chicken. Sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the top.
  5. Bake: Bake in the preheated oven for 20-25 minutes, or until the chicken is fully cooked and the cheese is melted and bubbly.

Tips

  • You can add some cooked bacon or sautéed mushrooms to the bake for extra flavor.
