AIR FRYER MINI POTATO CAKES

INGREDIENTS:

2 cups mashed potatoes

1 egg, beaten

1/2 cup all-purpose flour

1/4 cup breadcrumbs

1/4 teaspoon salt

1/8 teaspoon black pepper

Vegetable oil spray

INSTRUCTIONS:

Prepare the Potato Cake Mixture:Preheat your air fryer to 375°F.

In a large bowl, combine mashed potatoes, beaten egg, flour, breadcrumbs, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

Form the Potato Cakes:Form the mixture into small patties, about 2 inches in diameter, and place them on a plate or parchment-lined tray.

Air Fry:Lightly spray the air fryer basket with vegetable oil spray.

Arrange the potato cakes in a single layer in the air fryer basket, ensuring they are not overcrowded.

Air fry at 375°F for 10-12 minutes, flipping halfway through, until the potato cakes are golden brown and crispy.

Serve:Remove the potato cakes from the air fryer and drain on paper towels briefly to remove any excess oil.

Serve immediately while hot and crispy.
