Keto Reuben in a Bowl

Ingredients:

  • 1 lb corned beef, cooked and sliced
  • 2 cups sauerkraut, drained
  • 1 cup Swiss cheese, shredded
  • 1/2 cup Russian dressing (keto-friendly, recipe below)
  • 2 tbsp butter
  • 1 tsp caraway seeds (optional)
  • 1 cup dill pickles, chopped

Keto-Friendly Russian Dressing:

  • 1/2 cup mayonnaise
  • 2 tbsp sugar-free ketchup
  • 1 tbsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1 tsp lemon juice
  • 1/4 tsp paprika
  • Salt and pepper, to taste

Instructions:

  1. Prepare the Dressing:
    • In a small bowl, whisk together mayonnaise, sugar-free ketchup, Dijon mustard, Worcestershire sauce, lemon juice, and paprika.
    • Season with salt and pepper to taste. Set aside.
  2. Cook the Corned Beef:
    • If your corned beef isn’t pre-cooked, cook it according to package instructions or your preferred method. Once cooked, slice it into thin strips.
  3. Sauté the Sauerkraut:
    • In a large skillet, melt the butter over medium heat.
    • Add the drained sauerkraut and caraway seeds (if using) to the skillet.
    • Sauté for 5-7 minutes until the sauerkraut is heated through and slightly browned.
  4. Assemble the Bowl:
    • Divide the sautéed sauerkraut among serving bowls.
    • Top each bowl with a portion of the sliced corned beef.
    • Sprinkle the shredded Swiss cheese over the top.
    • Drizzle with the keto-friendly Russian dressing.
    • Garnish with chopped dill pickles.
  5. Serve:
    • Serve the Reuben bowls warm, and enjoy!
