Keto Garlic Bread
Ingredients:
For the Bread:
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup almond flour
- 2 large eggs
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
For the Garlic Topping:
- 1/4 cup unsalted butter (softened)
- 3-4 cloves garlic (minced)
- 2 tablespoons chopped fresh parsley (or 1 tablespoon dried parsley)
- 1/4 teaspoon salt (or to taste)
- Optional: 1/4 teaspoon black pepper

Instructions:
- Preheat the Oven:
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
- Prepare the Bread Dough:
- In a microwave-safe bowl, melt the shredded mozzarella cheese in the microwave. Heat in 30-second intervals, stirring in between, until fully melted and smooth.
- In a separate bowl, combine the almond flour, grated Parmesan cheese, baking powder, and salt.
- Add the melted mozzarella cheese to the dry ingredients and mix until well combined. Then, beat the eggs and add them to the mixture, stirring until a dough forms.
- Shape the Bread:
- Transfer the dough to the prepared baking sheet. Use your hands or a spatula to shape it into a rectangle or oval shape, about 1/2 inch thick.
- Bake the Bread:
- Bake in the preheated oven for 12-15 minutes, or until the bread is golden brown and cooked through.
- Prepare the Garlic Topping:
- While the bread is baking, mix the softened butter, minced garlic, chopped parsley, salt, and black pepper (if using) in a small bowl.
- Add the Garlic Topping:
- After the bread is done baking, remove it from the oven and spread the garlic butter mixture evenly over the top of the bread.
- Broil (Optional):
- For extra crispy garlic bread, switch the oven to broil and place the bread under the broiler for an additional 1-2 minutes, or until the garlic butter is bubbly and slightly browned. Watch it closely to prevent burning.
- Serve:
- Allow the garlic bread to cool slightly before slicing into pieces. Serve warm.
