Salsa and fat-free sour cream, for serving (optional)
Instructions:
Preheat your oven to 375°F (190°C).
In a large bowl, mix together the shredded chicken, diced tomatoes, green onions, bell peppers, chili powder, cumin, and salt until well combined.
Lay out the tortillas on a clean surface. Place a small amount (about 2 tablespoons) of shredded cheese in the center of each tortilla.
Spoon the chicken mixture evenly over the cheese on each tortilla.
Fold each tortilla in half over the filling to form a half-moon shape. Arrange the folded tortillas in a circle on a large baking sheet, overlapping slightly, to create a ring shape.
Lightly spray the top of the tortillas with cooking spray.
Bake in the preheated oven for 15-18 minutes, or until the tortillas are golden brown and crispy.
Remove from the oven and let cool slightly. Serve with salsa and fat-free sour cream if desired.
