Keto Beef & Broccoli

Ingredients:
- 1 lb (450g) beef sirloin or flank steak, thinly sliced
- 4 cups broccoli florets
- 3 tbsp avocado oil (or olive oil)
- 3 cloves garlic, minced
- 1 inch ginger, minced
- 1/4 cup soy sauce (or coconut aminos for a soy-free option)
- 2 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tbsp low-carb sweetener (like erythritol or monk fruit)
- 1 tsp xanthan gum (optional, for thickening)
- 1/4 cup beef broth
- Salt and pepper, to taste
- Sesame seeds (for garnish)
- Sliced green onions (for garnish)
Instructions:
- Prepare the Beef:
- In a bowl, mix soy sauce, sesame oil, rice vinegar, low-carb sweetener, and beef broth. Add the thinly sliced beef and marinate for at least 15 minutes.
- Cook the Broccoli:
- Heat 1 tablespoon of avocado oil in a large skillet or wok over medium-high heat. Add the broccoli florets and stir-fry for about 5 minutes until tender-crisp. Remove the broccoli from the skillet and set aside.
- Cook the Beef:
- In the same skillet, add the remaining 2 tablespoons of avocado oil. Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.
- Add the marinated beef (reserve the marinade) to the skillet and cook for about 3-5 minutes until browned.
- Combine and Thicken:
- Add the broccoli back to the skillet with the beef. Pour in the reserved marinade.
- If you prefer a thicker sauce, sprinkle the xanthan gum over the mixture and stir well to combine.
- Cook for another 2-3 minutes until the sauce thickens and everything is well coated.
- Season and Serve:
- Season with salt and pepper to taste.
- Garnish with sesame seeds and sliced green onions before serving.

- Serve this keto beef and broccoli on its own or over cauliflower rice for a complete meal.
