Veggie Stuffed Zucchini Boats

Ingredients

  • 2 medium sized zucchini
  • 1 to mato Roma or similar chopped
  • 4 mushrooms diced
  • 1 red bell pepper diced
  • 1 tsp garlic powder or fresh garlic
  • 1/2 tsp chili powder
  • salt and pepper to taste
  • 1/2 cup shredded fat free cheese
  • no cooking spray

Instructions

  1. Wash the zucchini and sliced lengthwise down the center.
  2. Use a spoon to scoop out the center of the zucchini removing all the seeds.
  3. In a bowl combine the tomatoes, red pepper, jalapeño, seasonings and cheese.
  4. 4.Mix all the ingredients are tossed in the seasoning.
  5. Then spoon the mixture into the center of each zucchini.
  6. Place in the air fryer tray or basket and spray with no cooking spray.
  7. Cook at 385-390 for about 14 minutes.
  8. Makes four servings
