INGREDIENTS
- 7 baked low fat corn tortilla chips
- 2 ounces Deli style roast beef slices cut into strips
- ¼ teaspoon dried oregano
- ¼ teaspoon ground cumin
- 2 tablespoon shredded reduced-fat Mexican cheese blend
- 2 tablespoon pickled jalapeno pepper chopped/sliced
- 2½ tablespoon fresh fat-free salsa (drained if very liquid)
INSTRUCTIONS
- Place tortilla chips in a single layer on a microwave-safe plate.
- Microwave them for 30 seconds.
- While the chips are in the microwave, mix roast beef with cumin and oregano.
- Take out the chips from the microwave and evenly spread the beef mixture on top.
- Sprinkle cheese over the beef and chips.
- Microwave for another 30 seconds until the beef is hot and the cheese melts. You can also bake it in the oven if you prefer.
- Add jalapenos and salsa on top.
- Garnish with cilantro.
