CHEESY CHICKEN BROCCOLI CASSEROLE

I love casseroles! They’re usually easy to make and don’t make much of a mess. This casserole fits into both of those categories, plus it’s cheesy!! If you like chicken, cheese, broccoli, cauliflower and Ritz crackers you’re going to want to try this.

Ingredients

  • 1 lb. cooked boneless, skinless chicken breast
  • 10 oz. cauliflower rice (if it’s frozen either thaw or cook it first)
  • 12 oz. chopped broccoli (if it’s frozen either thaw or cook it first)
  • 1/4 cup light mayonnaise
  • 1 egg
  • 1 cup reduced-fat Mexican cheese, divided
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon seasoning salt
  • 1/4 teaspoon pepper
  • 8 reduced-fat Ritz crackers

Instructions

  1. Preheat oven to 350 degrees F.
  2. Add the chicken, cauliflower rice and broccoli to a large bowl. Whisk the egg and add it to the bowl. Also add the mayonnaise, 1/2 cup cheese, garlic powder, onion powder, seasoning salt, and pepper. Stir together.
  3. Spray a 2 quart casserole dish and add the chicken mixture. Top the casserole with the other 1/2 cup of cheese.
  4. Place the Ritz crackers in a zip up bag and use a meat tenderizer or rolling pin to turn them into crumbs. Sprinkle over the casserole.
  5. Bake for 30 minutes. Enjoy!
