WW Lentil Soup -1 Pt.
Ingredients:
- 1 cup dry green or brown lentils, rinsed and drained
- 1 medium onion, finely chopped
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes, undrained
- 6 cups vegetable broth (low-sodium for a healthier option)
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
Instructions:
- In a large pot, combine the lentils, chopped onion, diced carrots, diced celery, minced garlic, diced tomatoes, vegetable broth, ground cumin, ground coriander, smoked paprika, dried thyme, salt, and pepper.
- Bring the soup to a boil over medium-high heat, then reduce the heat to low. Cover the pot and let the soup simmer for about 25-30 minutes or until the lentils and vegetables are tender.
- Adjust the seasoning with additional salt and pepper if needed.
- Ladle the lentil soup into bowls and garnish with chopped fresh parsley.
- Serve the Weight Watchers Lentil Soup with lemon wedges on the side for a burst of citrus flavor.
