Weight Watchers Tuna Melts
Ingredients:
For the Tuna Salad:
- 2 cans (5 oz each) tuna in water, drained
- 1/4 cup light mayonnaise
- 1 tablespoon Dijon mustard
- 1 celery stalk, finely chopped
- 1 tablespoon red onion, finely chopped
- Salt and pepper to taste
For the Tuna Melts:
- 4 whole wheat English muffins, split and toasted
- 1 cup reduced-fat shredded cheddar cheese
- 2 tomatoes, sliced
- Fresh parsley, chopped (for garnish, optional)
Instructions:
- In a bowl, combine drained tuna, light mayonnaise, Dijon mustard, chopped celery, and chopped red onion. Mix well until all ingredients are evenly combined.
- Season the tuna salad with salt and pepper to taste. Adjust the seasoning as needed.
- Preheat your oven broiler.
- Place the English muffin halves on a baking sheet.
- Spoon the tuna salad mixture onto each English muffin half.
- Top each with a slice of tomato and a sprinkle of shredded cheddar cheese.
- Place the baking sheet under the broiler for 2-3 minutes or until the cheese is melted and bubbly.
- Remove from the oven and garnish with chopped fresh parsley if desired.
- Serve the Weight Watchers Tuna Melts warm.
