Weight Watchers Slow Cooker Chicken Noodle Soup recipe

Ingredients:

  • 1 pound boneless, skinless chicken breasts
  • 8 cups low-sodium chicken broth
  • 4 carrots, peeled and sliced
  • 4 celery stalks, sliced
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 cups uncooked whole wheat egg noodles
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Place Ingredients in Slow Cooker: Place the chicken breasts, chicken broth, carrots, celery, onion, garlic, thyme, rosemary, bay leaf, salt, and pepper in the slow cooker.
  2. Cook on Low: Cover and cook on low for 6-7 hours or until the chicken is cooked through and the vegetables are tender.
  3. Shred Chicken: Remove the chicken breasts from the slow cooker and shred them using two forks. Return the shredded chicken to the slow cooker.
  4. Add Noodles: Add the uncooked whole wheat egg noodles to the slow cooker. Cook for an additional 20-30 minutes or until the noodles are tender.
  5. Adjust Seasoning: Taste the soup and adjust the seasoning if necessary. Remove the bay leaf.
  6. Serve: Ladle the Weight Watchers Slow Cooker Chicken Noodle Soup into bowls, garnish with fresh parsley, and serve.
