Weight Watchers Cinnamon Roll Casserole:
Ingredients:

- 1-2 tablespoons unsweetened almond milk
Instructions:
- Preheat the Oven:
- Preheat your oven to 350°F (175°C). Grease a baking dish.
- Prepare the Cinnamon Swirl:
- In a small bowl, mix together brown sugar substitute, ground cinnamon, and melted light butter. Set aside.
- Prepare the Casserole:
- Cut each cinnamon roll into quarters.
- In a separate bowl, whisk together eggs, almond milk, and vanilla extract.
- Add the cinnamon roll pieces to the egg mixture, coating them evenly.
- Assemble the Casserole:
- Layer half of the coated cinnamon roll pieces in the prepared baking dish.
- Drizzle half of the cinnamon swirl mixture over the cinnamon roll layer.
- Repeat with the remaining cinnamon roll pieces and cinnamon swirl mixture.
- Bake:
- Bake in the preheated oven for 25-30 minutes or until the casserole is golden brown and cooked through.
- Prepare the Icing (optional):
- In a bowl, whisk together powdered sugar substitute, softened fat-free cream cheese, and almond milk until smooth.
- Serve:
- Drizzle the optional icing over the warm casserole.
- Let it cool slightly before serving.
