Chorizo and Cabbage Casserole

Ingredients:

1lb Chorizo

1 Head of Green Cabbage (diced)

1 Small Onion (diced)

4 tbsp of Kerry gold butter

2 Cloves of Garlic

1-1 1/2 Cup HWC

1 Cup of Parm or Cheddar or Mozzarella Cheese ( I used a blend of Cheddar and Mozzarella cheese)

Himalayan Salt and Pepper

Heat electric skillet to 250 and brown chorizo. Remove and add butter, garlic, cabbage and onions. Sauté for about 10 minutes.

Add back in chorizo, HWC, cheese, salt and pepper. Simmer for 15 minutes and top with more cheese and cook until melted.
