Weight watchers farmers casserole

Ingredients:
- 2 cups frozen shredded hash browns, thawed
- 1 cup diced lean ham (Canadian bacon or turkey bacon can be used as a substitute)
- 1 cup diced bell peppers (mix of colors for variety)
- 1 cup diced onions
- 1 cup reduced-fat shredded cheddar cheese
- 1 cup fat-free milk
- 4 large eggs
- Salt and pepper to taste
- Cooking spray
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the thawed hash browns, diced ham, bell peppers, onions, and half of the shredded cheddar cheese. Mix well.
- In a separate bowl, whisk together the eggs and milk. Season with salt and pepper to taste.
- Pour the egg mixture over the hash brown mixture and stir until everything is evenly combined.
- Coat a baking dish with cooking spray. Transfer the mixture into the baking dish, spreading it out evenly.
- Sprinkle the remaining shredded cheddar cheese over the top.
- Bake in the preheated oven for about 35-40 minutes or until the casserole is set in the center and the top is golden brown.
- Allow the casserole to cool for a few minutes before slicing.
- Serve warm and enjoy!
