Air fryer blueberry muffins

Ingredients:

  1. 1 cup all-purpose flour
  2. 1/2 cup granulated sugar
  3. 1/2 teaspoon baking powder
  4. 1/4 teaspoon baking soda
  5. 1/4 teaspoon salt
  6. 1/2 cup unsalted butter, melted and cooled
  7. 1/2 cup plain yogurt
  8. 1 large egg
  9. 1 teaspoon vanilla extract
  10. 1 cup fresh or frozen blueberries
  11. Cooking spray

Instructions:

  1. In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk together the melted butter, yogurt, egg, and vanilla extract until well combined.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; it’s okay if there are a few lumps.
  4. Gently fold in the blueberries into the muffin batter.
  5. Preheat your air fryer to 320°F (160°C). Most air fryers will require preheating for best results.
  6. Line your air fryer basket with parchment paper muffin liners or use silicone muffin cups. If you don’t have liners, be sure to grease the basket with cooking spray to prevent sticking.
  7. Fill each muffin liner or cup with the muffin batter, filling them about 2/3 full.
  8. Place the muffins in the preheated air fryer basket, leaving some space between them.
  9. Cook the muffins in the air fryer for about 15-18 minutes at 320°F (160°C) or until a toothpick inserted into the center of a muffin comes out clean. Cooking times may vary slightly depending on your air fryer, so keep an eye on them.
  10. Once done, carefully remove the muffins from the air fryer and allow them to cool for a few minutes before transferring them to a wire rack to cool completely.
  11. Enjoy your air fryer blueberry muffins once they’ve cooled down. They are best when served fresh.
