WW-Vanilla Cake

Ingredients:

  • 1/4 cup (60g) light olive oil or unsweetened applesauce for a lower SmartPoints option
  • 1/4 cup (70g) granulated sweetener (use a sugar substitute like Stevia, Erythritol, or Monk Fruit for a lower SmartPoints option)
  • 2 cups (240g) almond flour
  • 4 large eggs
  • 1/4 cup (80g) fat-free Greek yogurt or light sour cream for a lower SmartPoints option
  • 2 teaspoons vanilla extract
  • 2 teaspoons baking powder

Instructions:

  1. Preheat your oven to the temperature specified in the original recipe.
  2. In a mixing bowl, combine the olive oil or unsweetened applesauce and sweetener (granulated sugar substitute). Mix well.
  3. Add the almond flour, eggs, fat-free Greek yogurt or light sour cream, vanilla extract, and baking powder. Mix until well combined.
  4. Pour the batter into your cake pan as instructed in the original recipe.
  5. Follow the baking instructions from the original recipe.

Vanilla Buttercream:

Ingredients:

  • 1/2 cup powdered sweetener (use a powdered sugar substitute)
  • 2 teaspoons vanilla extract
  • 4 tablespoons (60g) light butter or a lower-calorie butter substitute
  • 8 oz (225g) fat-free cream cheese, softened
  • 1 tablespoon fat-free Greek yogurt or light sour cream

Instructions:

  1. In a mixing bowl, combine the powdered sweetener and vanilla extract.
  2. In a separate bowl, beat the light butter until creamy. Gradually add the sweetener mixture and continue to beat until well combined.
  3. Add the softened cream cheese and fat-free Greek yogurt or light sour cream to the mixture. Beat until smooth and creamy.
  4. Once the cake has cooled, spread the frosting on top as instructed in the original recipe.
