3-Minute Oat Mug Cake – No Sugar, No Flour!

Ingredients:
1/2 ripe banana, mashed
1/4 cup (22g) rolled oats (old-fashioned or quick-cooking)
1 large egg
1/4 teaspoon baking powder
1/4 teaspoon cinnamon
1/2 teaspoon vanilla extract (optional)
Pinch of salt (about 1/8 teaspoon, optional)
1-2 tablespoons sugar-free chocolate chips (optional, for mixing in and topping)

Instructions:
1. Prepare Banana:
In a microwave-safe mug (at least 12 oz / 350 ml capacity), mash the ripe banana thoroughly with a fork until very smooth.
2. Add Wet Ingredients:
Add the egg, vanilla extract (if using), and salt (if using) to the mashed banana. Mix well with a fork until fully combined.
3. Add Dry Ingredients:
Stir in the rolled oats, baking powder, and cinnamon. Mix until just combined. Avoid overmixing.
4. Add Chocolate Chips (Optional):
If using sugar-free chocolate chips, stir most of them into the batter. Reserve a few for the top.
5. Cook:
Place the mug in the microwave. Cook on high for 1 to 2 minutes. The exact time will depend on your microwave’s wattage. Start with 1 minute, then add 15-30 second intervals until the cake looks set and springs back when lightly touched. It should not be jiggly in the center. Do not overcook, or it will become dry.
6. Top & Serve:
Immediately after cooking, if you reserved some chocolate chips, sprinkle them on top. They will melt slightly from the heat. Let the mug cake cool for 1-2 minutes before enjoying it straight from the mug.
