1 Minute Microwave Cheesecake

Ingredients:
- 2 tbsp cream cheese (softened)
- 2 tbsp sour cream or plain Greek yogurt
- 1 egg
- 1/2 tsp vanilla extract
- 1.5 tbsp sweetener (like erythritol, monk fruit, or sugar)
- Optional: crushed almond biscuits or graham cracker crumbs for base (1 tbsp)
Instructions:
- (Optional crust): In a microwave-safe ramekin or mug, press down the crushed biscuit or almond flour mixed with a little melted butter.
- In a small bowl, whisk together the cream cheese, sour cream, egg, vanilla, and sweetener until smooth and creamy.
- Pour the cheesecake mixture into the mug/ramekin over the crust (if using).
- Microwave on medium-high for 60-70 seconds. The edges should be set, and the center slightly jiggly.
- Let it cool for a few minutes. Chill in the fridge if you prefer it cold.
- Top with berries, sugar-free syrup, or a sprinkle of cinnamon!
