1 Minute Microwave Cheesecake

Ingredients:

  • 2 tbsp cream cheese (softened)
  • 2 tbsp sour cream or plain Greek yogurt
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1.5 tbsp sweetener (like erythritol, monk fruit, or sugar)
  • Optional: crushed almond biscuits or graham cracker crumbs for base (1 tbsp)

Instructions:

  1. (Optional crust): In a microwave-safe ramekin or mug, press down the crushed biscuit or almond flour mixed with a little melted butter.
  2. In a small bowl, whisk together the cream cheese, sour cream, egg, vanilla, and sweetener until smooth and creamy.
  3. Pour the cheesecake mixture into the mug/ramekin over the crust (if using).
  4. Microwave on medium-high for 60-70 seconds. The edges should be set, and the center slightly jiggly.
  5. Let it cool for a few minutes. Chill in the fridge if you prefer it cold.
  6. Top with berries, sugar-free syrup, or a sprinkle of cinnamon!
