Ingredients (for 1 serving):
- 2 oz (about ¼ cup) cream cheese, softened
- 2 tbsp sour cream (or Greek yogurt, optional)
- 1 egg
- 1 ½ tbsp powdered erythritol (or sweetener of choice, to taste)
- ½ tsp vanilla extract
- Optional: ¼ tsp lemon juice for that cheesecake tang
🔥 Directions:
- Soften cream cheese:
- In a microwave-safe mug or ramekin, microwave cream cheese for 10–15 seconds until soft.
- Stir well to make it smooth.
- Mix it up:
- Add egg, sweetener, vanilla, sour cream, and lemon juice (if using).
- Whisk or stir until the mixture is smooth and lump-free.
- Microwave:
- Microwave on high for 45–60 seconds.
- The center should look set but still slightly soft — it will firm up as it cools.
- Cool & enjoy:
- Let cool for 2–3 minutes before eating warm, or chill for 10–15 minutes if you prefer it cold like classic cheesecake.
