1 Minute Microwave Cheesecake

Ingredients (for 1 serving):

  • 2 oz (about ΒΌ cup) cream cheese, softened
  • 2 tbsp sour cream (or Greek yogurt, optional)
  • 1 egg
  • 1 Β½ tbsp powdered erythritol (or sweetener of choice, to taste)
  • Β½ tsp vanilla extract
  • Optional: ΒΌ tsp lemon juice for that cheesecake tang

  1. Soften cream cheese:
    • In a microwave-safe mug or ramekin, microwave cream cheese for 10–15 seconds until soft.
    • Stir well to make it smooth.
  2. Mix it up:
    • Add egg, sweetener, vanilla, sour cream, and lemon juice (if using).
    • Whisk or stir until the mixture is smooth and lump-free.
  3. Microwave:
    • Microwave on high for 45–60 seconds.
    • The center should look set but still slightly soft β€” it will firm up as it cools.
  4. Cool & enjoy:
    • Let cool for 2–3 minutes before eating warm, or chill for 10–15 minutes if you prefer it cold like classic cheesecake.
