1 Minute Microwave Cheesecake
Ingredients:
- 2 tbsp graham cracker crumbs
- 1 tbsp sugar
- 1 tbsp melted butter
- 3 oz cream cheese (softened)
- 2 tbsp sugar
- 1/4 tsp vanilla extract
- 1/4 cup sour cream
- Optional: Fresh fruit, chocolate chips, or fruit sauce for topping

Instructions:
- Prepare the Crust:
- In a small microwave-safe bowl, mix together the graham cracker crumbs, sugar, and melted butter until well combined.
- Press the mixture into the bottom of another small microwave-safe mug or bowl to form a crust. Set aside.
- Make the Cheesecake Filling:
- In a separate bowl, beat the softened cream cheese until smooth.
- Add the sugar, vanilla extract, and sour cream, and mix until well combined.
- Microwave:
- Spoon the cheesecake filling over the prepared crust in your mug or bowl.
- Microwave on high for about 60 seconds. Keep an eye on it to make sure it doesn’t overflow. The center should be set but still slightly jiggly.
- Cool and Serve:
- Let the cheesecake cool for a few minutes before eating. It will firm up a bit more as it cools.
- Top with fresh fruit, chocolate chips, or fruit sauce if desired.
