1 Minute Microwave Cheesecake

Ingredients:

  • 2 tbsp graham cracker crumbs
  • 1 tbsp sugar
  • 1 tbsp melted butter
  • 3 oz cream cheese (softened)
  • 2 tbsp sugar
  • 1/4 tsp vanilla extract
  • 1/4 cup sour cream
  • Optional: Fresh fruit, chocolate chips, or fruit sauce for topping

Instructions:

  1. Prepare the Crust:
    • In a small microwave-safe bowl, mix together the graham cracker crumbs, sugar, and melted butter until well combined.
    • Press the mixture into the bottom of another small microwave-safe mug or bowl to form a crust. Set aside.
  2. Make the Cheesecake Filling:
    • In a separate bowl, beat the softened cream cheese until smooth.
    • Add the sugar, vanilla extract, and sour cream, and mix until well combined.
  3. Microwave:
    • Spoon the cheesecake filling over the prepared crust in your mug or bowl.
    • Microwave on high for about 60 seconds. Keep an eye on it to make sure it doesn’t overflow. The center should be set but still slightly jiggly.
  4. Cool and Serve:
    • Let the cheesecake cool for a few minutes before eating. It will firm up a bit more as it cools.
    • Top with fresh fruit, chocolate chips, or fruit sauce if desired.
