0 Point Crustless Quiche

Ingredients:

  • 6 large eggs (or substitute with egg whites or a combination of both for fewer points)
  • 1 cup non-fat Greek yogurt (plain)
  • 1/2 cup non-fat milk (or unsweetened almond milk)
  • 1 cup chopped vegetables (such as spinach, bell peppers, onions, mushrooms, or broccoli)
  • 1/2 cup diced lean ham or turkey bacon (optional, adjust based on your plan)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder (optional)
  • 1/4 teaspoon onion powder (optional)
  • Cooking spray

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare Baking Dish: Lightly spray a 9-inch pie dish or a similar baking dish with cooking spray.
  3. Mix Ingredients: In a large bowl, whisk together the eggs, Greek yogurt, and milk until smooth. Stir in the salt, pepper, garlic powder, and onion powder.
  4. Add Vegetables and Protein: Add the chopped vegetables and ham or turkey bacon (if using) to the egg mixture. Stir well to combine.
  5. Pour and Bake: Pour the mixture into the prepared baking dish. Spread it out evenly with a spatula if needed.
  6. Bake: Bake in the preheated oven for 25-30 minutes, or until the quiche is set in the middle and lightly golden on top. A toothpick inserted into the center should come out clean.
  7. Cool and Serve: Allow the quiche to cool for a few minutes before slicing and serving.

Tips:

  • You can customize the quiche by using different vegetables or adding fresh herbs for more flavor.
