🛒 Ingredients (4 servings)

1 cup low-fat cottage cheese

1 cup plain nonfat Greek yogurt

1 cup crushed pineapple (in juice, well drained)

1–2 tbsp sugar-free vanilla pudding mix (for thickness & sweetness)

½ tsp vanilla extract

Optional: zero-cal sweetener to taste

Optional toppings: toasted coconut, chopped pecans, extra pineapple

👩‍🍳 Instructions

1️⃣ Blend the base
Blend cottage cheese until completely smooth.

2️⃣ Mix
In a bowl, combine blended cottage cheese, Greek yogurt, vanilla, and pudding mix.

3️⃣ Fold in pineapple
Gently stir in well-drained crushed pineapple.

4️⃣ Chill
Refrigerate at least 30–60 minutes to thicken.

5️⃣ Serve
Top with coconut or nuts if desired.
