- 2 medium zucchini (about 2 cups grated)
- 2 large eggs
- ΒΌ cup almond flour (or coconut flour for lower carbs)
- 2 tbsp grated Parmesan cheese (optional, for flavor & binding)
- Β½ tsp garlic powder
- Β½ tsp salt
- ΒΌ tsp black pepper
- Optional: 1 tsp dried oregano or cumin

- Prepare zucchini
- Grate zucchini and squeeze out excess water using a clean towel or cheesecloth.
- Mix batter
- In a bowl, combine zucchini, eggs, almond flour, Parmesan, and seasonings.
- Cook tortillas
- Heat a non-stick skillet over medium-low heat.
- Spoon 2β3 tbsp of batter per tortilla and spread gently into a round shape.
- Cook 2β3 minutes per side, until golden and set.
- Repeat with remaining batter.
- Serve warm
