  • 2 medium zucchinis, cut into rounds
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup low-carb marinara sauce
  • 1/4 cup sliced pepperoni or any desired pizza toppings (e.g., mushrooms, bell peppers, olives)
  • 1 teaspoon dried oregano
  • Salt and pepper to taste


  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Prepare Zucchini Rounds: Slice the zucchinis into rounds, about 1/4 inch thick. Pat them dry with a paper towel to remove excess moisture.
  3. Bake Zucchini Rounds: Place the zucchini rounds on a baking sheet lined with parchment paper. Lightly season with salt and pepper. Bake for 5-7 minutes until they start to soften.
  4. Add Toppings: Remove the zucchini rounds from the oven. Spread a thin layer of marinara sauce on each round. Sprinkle with mozzarella and Parmesan cheese. Add your preferred toppings and a sprinkle of dried oregano.
  5. Bake Again: Return the baking sheet to the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbly.
