Diabetic Zucchini Fritters (Low Carb)

Ingredients
- 2 medium zucchini, grated
- ½ tsp salt (for draining moisture)
- 2 large eggs
- ½ cup almond flour
- ¼ cup grated Parmesan cheese
- 2 tbsp chopped green onions (optional)
- 1 clove garlic, minced
- ½ tsp black pepper
- ½ tsp paprika or Italian seasoning
- 2–3 tbsp olive oil (for frying)
Instructions
- Prep zucchini:
Place grated zucchini in a colander, sprinkle with salt, and let sit 10 minutes.
Squeeze out as much liquid as possible using a clean towel (very important). - Mix batter:
Combine drained zucchini, eggs, almond flour, Parmesan, garlic, seasonings, and onions. - Cook:
Heat olive oil over medium heat.
Scoop 2 tablespoons per fritter and flatten gently.
Cook 3–4 minutes per side until golden brown. - Drain:
Place on paper towel briefly before serving.

- Almond flour keeps carbs much lower than regular flour.
- Serve with plain Greek yogurt or a sugar-free yogurt dip for extra protein.
