Zucchini Fritters

Diabetic Zucchini Fritters (Low Carb)

Ingredients

  • 2 medium zucchini, grated
  • ½ tsp salt (for draining moisture)
  • 2 large eggs
  • ½ cup almond flour
  • ¼ cup grated Parmesan cheese
  • 2 tbsp chopped green onions (optional)
  • 1 clove garlic, minced
  • ½ tsp black pepper
  • ½ tsp paprika or Italian seasoning
  • 2–3 tbsp olive oil (for frying)

Instructions

  1. Prep zucchini:
    Place grated zucchini in a colander, sprinkle with salt, and let sit 10 minutes.
    Squeeze out as much liquid as possible using a clean towel (very important).
  2. Mix batter:
    Combine drained zucchini, eggs, almond flour, Parmesan, garlic, seasonings, and onions.
  3. Cook:
    Heat olive oil over medium heat.
    Scoop 2 tablespoons per fritter and flatten gently.
    Cook 3–4 minutes per side until golden brown.
  4. Drain:
    Place on paper towel briefly before serving.

🩺 Blood Sugar Tips

  • Almond flour keeps carbs much lower than regular flour.
  • Serve with plain Greek yogurt or a sugar-free yogurt dip for extra protein.
  • These are excellent as a side or light lunch.
