Zucchini “apples”

Zucchini “apples” are my new favorite, especially since it’s autumn! 😊 Just peel zucchini, slice lengthwise and scoop out the seeds. Then you can chop or slice it how you like. Put it in a heavy bottom pot with a little butter, lemon juice, cinnamon and/or apple pie spice, and your favorite sweetener (I used half regular truvia and half lakanto monkfruit brown sugar). Stir it up, put a lid on it, and cook on low-med about ten minutes. You can eat it as is like fried apples (I added chopped walnuts and pecans), make apple crumbles or pie, top low carb cheesecake or chaffles with it, etc. 😊
