Ingredients
Wet Ingredients
- 3 ripe bananas (or 1 cup unsweetened applesauce)
- 2 large eggs
- 1/2 cup plain Greek yogurt
- 1/4 cup honey or maple syrup
- 1/4 cup melted coconut oil or butter
- 1 tsp vanilla extract
- Zest of 1 lemon
- Juice of 1 lemon (about 2 tbsp)
Dry Ingredients
- 1 1/2 cups oat flour
(or blend oats into flour) - 1 scoop vanilla protein powder (25โ30g)
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon (optional)
Add-ins
- 1 cup fresh or frozen blueberries
- Optional: 1 tbsp chia seeds or flaxseed
Instructions
1๏ธโฃ Preheat & Prepare
Preheat oven to 350ยฐF (175ยฐC)
Line a muffin tin with liners or grease it.
2๏ธโฃ Mix Wet Ingredients
In a large bowl, mash bananas (or use applesauce).
Add eggs, Greek yogurt, honey, melted oil, vanilla, lemon zest, and lemon juice. Mix well.
3๏ธโฃ Add Dry Ingredients
Add oat flour, protein powder, baking powder, baking soda, salt, and cinnamon.
Mix until just combined (donโt overmix).
4๏ธโฃ Fold in Blueberries
Gently fold in blueberries.
5๏ธโฃ Bake
Spoon batter into muffin cups (about 3/4 full).
Bake 18โ22 minutes until a toothpick comes out clean.
6๏ธโฃ Cool & Enjoy
Cool 5 minutes in pan, then transfer to a wire rack.
๐ Optional Lemon Glaze (Dessert-Level)
- 1/2 cup powdered sugar (or monk fruit)
- 1โ2 tbsp lemon juice
- 1 tbsp Greek yogurt (optional)
Mix until smooth and drizzle over cooled muffins.
