Ingredients

Wet Ingredients

  • 3 ripe bananas (or 1 cup unsweetened applesauce)
  • 2 large eggs
  • 1/2 cup plain Greek yogurt
  • 1/4 cup honey or maple syrup
  • 1/4 cup melted coconut oil or butter
  • 1 tsp vanilla extract
  • Zest of 1 lemon
  • Juice of 1 lemon (about 2 tbsp)

Dry Ingredients

  • 1 1/2 cups oat flour
    (or blend oats into flour)
  • 1 scoop vanilla protein powder (25โ€“30g)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon (optional)

Add-ins

  • 1 cup fresh or frozen blueberries
  • Optional: 1 tbsp chia seeds or flaxseed

Instructions

1๏ธโƒฃ Preheat & Prepare

Preheat oven to 350ยฐF (175ยฐC)
Line a muffin tin with liners or grease it.


2๏ธโƒฃ Mix Wet Ingredients

In a large bowl, mash bananas (or use applesauce).
Add eggs, Greek yogurt, honey, melted oil, vanilla, lemon zest, and lemon juice. Mix well.


3๏ธโƒฃ Add Dry Ingredients

Add oat flour, protein powder, baking powder, baking soda, salt, and cinnamon.
Mix until just combined (donโ€™t overmix).


4๏ธโƒฃ Fold in Blueberries

Gently fold in blueberries.


5๏ธโƒฃ Bake

Spoon batter into muffin cups (about 3/4 full).
Bake 18โ€“22 minutes until a toothpick comes out clean.


6๏ธโƒฃ Cool & Enjoy

Cool 5 minutes in pan, then transfer to a wire rack.


๐Ÿ‹ Optional Lemon Glaze (Dessert-Level)

  • 1/2 cup powdered sugar (or monk fruit)
  • 1โ€“2 tbsp lemon juice
  • 1 tbsp Greek yogurt (optional)

Mix until smooth and drizzle over cooled muffins.
